My very own Taco Bell
Continuing down memory lane with my younger self, I've had a lifelong love of tacos and burritos that continues to this day. My wife doesn't seem to understand how anyone could eat Mexican food daily, but I am that person. It started when I was a kid with a love of Taco Bell. My go-to meal was a bean and cheese burrito and a taco. I used to draw these cut-away houses on large pieces of white butcher paper where you could see all the rooms. In the house, I would always draw my own personal Taco Bell. So whenever I yearned for a burrito or a taco, I could walk over and grab one. What a life that would be, right?
Over time though, as I got older, my love of all things Taco Bell began to fade, and my tastes shifted to Del Taco and then to what has become known as Baja Fresh Thursday. Where my son and I go almost every week for lunch and then visit the bookstore afterward. My meal of choice is a bean and cheese burrito on a wheat tortilla and an unsweetened iced tea. Even though my son goes with me to Baja Fresh each week, no one in my family loves Mexican food as much as I do. They like to eat it on occasion but not every day. Who knows, maybe when my decrepit older self comes back to visit me at this age, I'll learn that I no longer love Mex— No! I don't even want to think that's a possibility.
